Not much can get Digby Pancake out of bed on a cold day in Minnesota!
Everywhere you go in Minnesota, you will find a version of a Minnesota Hotdish. A Hotdish is a variety of casserole which typically contains a starch, a meat or other protein, and a canned or frozen vegetable, mixed with canned soup. The dish originates from and is popular in the Upper Midwest region of the United States, particularly the states of Minnesota and North Dakota. Wild rice is also extremely plentiful in this area of the country and delicious. Every family has their own special way of cooking it.
Well, we like to make our dog-friendly versions healthy, fresh and tasteful. Minnesota inspired us to get creative! You can share this recipe with your dog of course, but would need to add some seasoning to make it person friendly too.
Minnesota Wild Rice Hot Dish
1 lb. low fat, cooked ground beef, drained
1 c. celery, chopped
1/2 c. green pepper, chopped
1 c. wild rice, rinsed well
2 c. cold water
1 cup no salt added chicken broth

Brown the hamburger, celery, and green pepper. Mix all the rest of the ingredients together and add the cooked ground beef. Pour into a greased casserole and bake at 350 for 1 1/2 hours, or until done. Let cool completely before serving to your dog.
